Spicy Fish Stew

This spicy fish stew is super flavorful, and although spicy, the heat does not overwhelm the dish, allowing the delicate flavor of the fish to come through.
Easy to cook and totally delicious !
Ingredients
2 tbls Oil (Olive or Veg)
3 Good Size White fish Pieces (cod or Pollock are great)
2 cups passata
1 tbls Garlic Paste
2 tbls Tomato Puree
1 ts Sea Salt
1 ts Ground Black Pepper
1 tbls Smoked Paprika
1 tbls Ground Cumin
1 tbls Coriander
1/2 - 1 tbls Crushed Chillies
Cooking Instructions

1. In a bowl, mix the olive oil, garlic paste, all of the spices and tomato puree to create a paste.

2. Heat a large pan then add the spicy paste and cook, stirring, until fragrant for about 45 seconds. Dont over cook and burn, it will turn bitter !

3. Add the tomato passata. As it starts to boil, add the fish fillets, spoon the sauce over the fish making sure they are well covered.

4. If your pan has a lid cover the dish (if not cover with foil), lower heat to med and simmer for about 15 mins until the fish is cooked to perfection.

Its as simple as that, serve nice and hot with some fresh crusty bread and a cold glass of white wine
